- 4 roma tomatoes, chopped
- 1/4 cup red bell pepper, diced
- 1/3 cup carrots, chopped
- 1/4 cup yellow onion, diced
- 1/3 cup cilantro, unpacked
- 3/4 tsp sea salt
- 3/4 tsp garlic powder
- 1/4 tbsp smoked paprika
- 1/2 lime, juice squeezed
- 1/2 cup shredded pepper jack cheese
- 1 cup bag tortilla chips
- 1/2 Jalapeno, seeds removed
- 2 cup warm water
Method
- Using a high power blender add below ingredients.
- Blend ingredients together on high until it turns into a smooth soup consistency.
- On medium heat, pour soup into a pot, and cook for 3 minutes.
- Stirring occasionally.
- In your serving bowls take tortilla chips and using your hands break them into small spoon size pieces.
- Pour your soup over top of the broken chips.
- Serve with your favorite toppings.
- I used extra tortillas & pepper jack cheese, sour cream, and cilantro!
