Ingredients

  • 4 roma tomatoes, chopped
  • 1/4 cup red bell pepper, diced
  • 1/3 cup carrots, chopped
  • 1/4 cup yellow onion, diced
  • 1/3 cup cilantro, unpacked
  • 3/4 tsp sea salt
  • 3/4 tsp garlic powder
  • 1/4 tbsp smoked paprika
  • 1/2 lime, juice squeezed
  • 1/2 cup shredded pepper jack cheese
  • 1 cup bag tortilla chips
  • 1/2 Jalapeno, seeds removed
  • 2 cup warm water

Method

  • Using a high power blender add below ingredients.
  • Blend ingredients together on high until it turns into a smooth soup consistency.
  • On medium heat, pour soup into a pot, and cook for 3 minutes.
  • Stirring occasionally.
  • In your serving bowls take tortilla chips and using your hands break them into small spoon size pieces.
  • Pour your soup over top of the broken chips.
  • Serve with your favorite toppings.
  • I used extra tortillas & pepper jack cheese, sour cream, and cilantro!
