- 12 flour tortillas
- 1/2 c. vegetable oil
- 1/2 c. chopped green onions
- 1 can whole tomatoes, drained
- 1/2 tsp. ground oregano
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 c. shredded Monterey Jack cheese
- dairy sour cream
Method
- Cut tortillas into thin strips.
- Heat oil in 10-inch skillet until hot.
- Cook tortillas and onions, turning occasionally until tortillas are crisp, about 10 minutes.
- Stir in tomatoes, oregano, salt and pepper.
- Sprinkle with cheese; heat just until cheese is melted.
- Serve with sour cream.
- Makes 4 to 6 servings.
