Ingredients

  • 12 flour tortillas
  • 1/2 c. vegetable oil
  • 1/2 c. chopped green onions
  • 1 can whole tomatoes, drained
  • 1/2 tsp. ground oregano
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. shredded Monterey Jack cheese
  • dairy sour cream

Method

  • Cut tortillas into thin strips.
  • Heat oil in 10-inch skillet until hot.
  • Cook tortillas and onions, turning occasionally until tortillas are crisp, about 10 minutes.
  • Stir in tomatoes, oregano, salt and pepper.
  • Sprinkle with cheese; heat just until cheese is melted.
  • Serve with sour cream.
  • Makes 4 to 6 servings.
