Ingredients

  • 3 c. flour
  • 1 Tbsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 1/2 c. chopped pecans
  • 2 eggs, beaten
  • 1 c. milk
  • 1 c. canned pumpkin
  • 3/4 c. firmly packed brown sugar
  • 1/4 c. oil
  • 1 tsp. baking soda

Method

  • Sift together flour, baking powder and spices.
  • Mix pecans. Blend eggs, milk, pumpkin, brown sugar, oil and soda.
  • Add liquid all at once to flour mixture, stirring only until flour is moistened.
  • Pour into 2 greased 1 pound coffee cans.
  • Bake in preheated oven at 350° for 1 hour and 15 minutes or until done. Cool 15 minutes before removing from cans.
  • Cool thoroughly before cutting.
