Ingredients

  • 2 tablespoons butter
  • 12 onion, chopped
  • 2 tomatoes, cored and cut into chunks
  • 12 teaspoon garlic salt
  • 12 teaspoon cornstarch
  • 2 -3 eggs
  • 1 tablespoon parsley

Method

  • Melt butter in a 10-inch skillet over medium heat.
  • Add onion and cook about 5 minutes until onion is soft.
  • Increase heat to medium-high.
  • Add tomatoes and salt and simmer, stirring occasionally, until liquid evaporates Beat together cornstarch and eggs and add to pan.
  • decrease heat to medium-low, cover, and cook until eggs are set.
  • sprinkle with parsley.
