Ingredients
- 2 tablespoons butter
- 12 onion, chopped
- 2 tomatoes, cored and cut into chunks
- 12 teaspoon garlic salt
- 12 teaspoon cornstarch
- 2 -3 eggs
- 1 tablespoon parsley
Method
- Melt butter in a 10-inch skillet over medium heat.
- Add onion and cook about 5 minutes until onion is soft.
- Increase heat to medium-high.
- Add tomatoes and salt and simmer, stirring occasionally, until liquid evaporates Beat together cornstarch and eggs and add to pan.
- decrease heat to medium-low, cover, and cook until eggs are set.
- sprinkle with parsley.
