Ingredients

  • 1 lb. plum tomatoes
  • 1 large onion
  • Italian seasoning
  • salt
  • parsley flakes
  • garlic powder
  • onion powder
  • 1/4 c. olive oil
  • 1/4 c. red wine vinegar

Method

  • In medium bowl, mix olive oil and red wine vinegar.
  • Adjust amounts to taste.
  • Add all seasonings, again to desired taste. Wash, dry and halve tomatoes, removing the seeds and soft insides. Cut thin slices of the halved tomatoes.
  • Add these slices and thinly sliced onion to mixture in bowl.
  • Mix thoroughly and frequently to marinate.
  • Serve at room temperature.
