Ingredients
- 1 pkg. yellow cake mix without pudding
- 1 (20 oz.) can crushed pineapple
- 1 c. sugar
- 1 (6 serving) pkg. vanilla pudding mix (not instant)
- 2 c. whipped topping
- flaked coconut, lightly toasted
Method
- Prepare cake as directed and bake in 9 x 13-inch pan.
- Combine crushed pineapple and sugar in saucepan.
- Bring to a boil; cook for 2 to 3 minutes.
- Cool slightly.
- When baked cake has cooled, poke holes in it with a fork.
- Pour pineapple mixture over it.
- Prepare pudding mix according to package directions.
- Cool.
- Spread over top of pineapple.
- Chill.
- Just before serving, cover with whipped topping and sprinkle with toasted coconut.
