Ingredients

  • 1 pkg. yellow cake mix without pudding
  • 1 (20 oz.) can crushed pineapple
  • 1 c. sugar
  • 1 (6 serving) pkg. vanilla pudding mix (not instant)
  • 2 c. whipped topping
  • flaked coconut, lightly toasted

Method

  • Prepare cake as directed and bake in 9 x 13-inch pan.
  • Combine crushed pineapple and sugar in saucepan.
  • Bring to a boil; cook for 2 to 3 minutes.
  • Cool slightly.
  • When baked cake has cooled, poke holes in it with a fork.
  • Pour pineapple mixture over it.
  • Prepare pudding mix according to package directions.
  • Cool.
  • Spread over top of pineapple.
  • Chill.
  • Just before serving, cover with whipped topping and sprinkle with toasted coconut.
