- 1/3 c. olive oil
- 1/4 c. grated Parmesan cheese
- 1/4 tsp. pepper
- 1/3 c. red wine vinegar
- 1 Tbsp. anchovy paste
- 4 medium new potatoes, scrubbed, cut in 1/2-inch cubes and cooked until tender
- 1 (16 oz.) can pinto beans, rinsed and drained
- 1 rib celery with leaves, thinly sliced
- 1 large carrot, shredded
- 1/3 c. packed fresh parsley, finely chopped
Method
- Whisk first 5 ingredients in a large bowl until blended.
- Add remainder of ingredients and toss to mix and coat.
