Ingredients

  • 1 loaf (1 lb) crusty sourdough bread
  • 1/4 cup mayonnaise
  • 1/3 cup store-bought basil pesto
  • 1 head baby Romaine lettuce, trimmed, leaves torn
  • 2 medium tomatoes, chopped
  • 1/2 medium red onion, thinly sliced
  • 12 oz roasted or rotisserie chicken breast, skin removed, shredded
  • None None Oven-baked french fries, to serve

Method

  • Cut bread into eight 3/4 inch-thick slices; toast. Spread toast with combined mayonnaise and pesto.
  • Top 4 of the slices of toast with lettuce, tomato, onion and chicken. Top with the remaining slices of toast. Serve with oven-baked fries.
