Ingredients

  • 1 cup granulated sugar
  • 1/3 cup flour
  • 1/4 cup coffee instant dark roast, Belgian Waffle cookies broken in to pieces
  • 1/2 cup granulated sugar
  • 12 lady fingers
  • 1 1/2 cups crust graham crackers
  • 1 tablespoon cocoa powder

Method

  • In a mixer mix , combine eggs, sugar, flour, heavy whipping cream, salt, coffee 1 tbls cinnamon, 1 tbls nutmeg
  • in a small sauce pan add Marsala and 1/3 cup sugar reduce to syrup consistency let cool, take the lady fingers dipping them in on one end set aside on a plate..
  • prepare spring form pan, spray baking spray bottom and sides, add rough chunks graham crackers to the bottom of the pan
  • Pour 1/2 batter into pan, remaining Marsala mixture add 8 lady fingers in any pattern pour remaining amount add the remaining lady fingers to the top of cheesecake bake at 250 for 1 hour then at 350 degrees for 1 hour let cool in over for 15 minutes. ***place a separate pan of water beneath the cheesecake****
  • sprinkle the cinnamon, cocoa on toll of cooled cake, add broken wafer as decoration and ***optional drizzle caramel and chocolate on the cheesecake
