Ingredients

  • 2 lb. baking potatoes, cut into 1-inch pieces
  • 1 pkg. (8 oz.) non-fat process cream cheese
  • 1 cup plain nonfat yogurt
  • 1/2 tsp. garlic powder
  • 1/4 tsp. salt
  • Vegetable cooking spray
  • 2 tbsp. reduced-calorie margarine, melted
  • 1/2 tsp. paprika

Method

  • Place potato in a saucepan; add water to cover, and bring to a boil.
  • Cover, reduce heat, and simmer 20 minutes or until very tender; drain.
  • Combine potato, cream cheese, and next 3 ingredients in a bowl; beat at medium speed of an electric mixer 2 minutes or until smooth.
  • Spoon into an 11x7x2-inch baking dish coated with cooking spray; drizzle margarine over potato mixture.
  • Sprinkle with paprika.
  • Bake, uncovered, at 350F for 30 minutes.
