Ingredients

  • 1/2 c. sliced almonds
  • 3 Tbsp. sugar
  • 6 c. romaine lettuce, torn
  • 1 11-oz. can mandarin oranges, drained
  • 1 c. sliced celery
  • 3 green onions, chopped
  • 1/2 c. oil
  • 1/4 c. vinegar
  • 2-3 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/4 tsp. garlic powder

Method

  • In a small saucepan over medium heat, cook and stir almonds and sugar until almonds are coated and lightly browned, about 4 minutes.
  • Spread the almonds on heavy-duty foil to cool; gently break apart.
  • In a large salad bowl, combine romaine, oranges, celery and onions.
  • Top with almonds.
  • In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, salt, dry mustard, and garlic powder; shake well. Pour over the salad and toss gently.
