Ingredients

  • 1-1/2 cup Softened Butter
  • 1-1/4 cup White Sugar
  • 1-1/4 cup Brown Sugar
  • 1 Tablespoon Vanilla Extract
  • 1 can (40 Oz. Can) Sweet Potatoes
  • 4 cups Flour, Divided
  • 1/2 teaspoons Salt
  • 2 teaspoons Baking Powder
  • 1 bag (12 Oz. Size) Chocolate Chip Morsels

Method

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl cream together butter, sugars, vanilla, and sweet potatoes till smooth. Add 2 cups of flour, then stir. Then add salt and baking powder, stir until well incorporated. Then add the remaining 2 cups of flour to the cookie mixture.
  • Stir with a spoon until there are no more lumps and it has a smooth texture. Add chocolate chips and stir to incorporate them well into the cookie batter.
  • Spread out cookie batter onto a greased cookie or matted cookie sheet. Bake for 20 minutes then check to see if they are fully done in the middle. If not, continue baking 5 minutes at a time, inserting a toothpick to check for doneness. They should be a dark cinnamon color and the toothpick should come out clean.
  • Cool, cut, and enjoy. Enjoy that your kids are eating veggies in their cookies!
  • Note: These are really good. The brown sugar hides the sweet potatoes pretty well, and they add just a special something to make these cookie-bars something that your kids will beg you to make again and again!
