Ingredients

  • 4 c. buttermilk
  • 4 c. old-fashioned oats
  • 4 eggs
  • 1/2 c. melted butter
  • 1 c. flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. sugar
  • 1/2 tsp. cinnamon or more to taste
  • 1/2 tsp. salt (optional)

Method

  • Combine oats and buttermilk and refrigerate overnight.
  • Add slightly beaten eggs and melted butter to mixture.
  • In a medium bowl, combine flour, soda, baking powder, sugar, cinnamon and salt. Add buttermilk mixture, stirring enough to barely moisten dry ingredients.
  • For each pancake, drop 1/2 cup batter onto lightly greased griddle.
  • Cook until surface is bubbly and edges are slightly dry, then turn and cook other side.
  • This recipe makes about 26 pancakes.
  • Reduce ingredients by half for smaller family.
