Ingredients

  • FOR THE CAKE:
  • 1 Cup Oil
  • 1 1/3 Cup Sugar
  • 2 Eggs
  • 2 Tsp Vanilla
  • 2 Cups Flour
  • 2 Tsp Soda
  • 2 Tsp Cinnamon
  • 1/2 Tsp Nutmeg
  • 1/2 Tsp Cloves
  • 1 Tsp Salt
  • 2 Cups Grated Carrots
  • 1 Cup Coconut
  • 1 Cup Crushed Pineapple (not Drained)
  • 3/4 Cup Walnuts

  • FOR FROSTING:
  • 1/2 Cup Butter
  • (8 Oz) Cream Cheese
  • 2 Cups Powdered Sugar
  • 2 Tsp Vanilla

Method

  • Mix oil, sugar, eggs and vanilla. Stir in flour, soda, cinnamon, nutmeg, cloves, and salt.
  • Add carrots, coconut, pineapple and walnuts until combined. Pour into greased 9x13 pan and bake at 350 for 50 minutes or until set. Let cool.
  • Mix frosting ingredients until combined. Spread over cooled cake. Enjoy!
