Ingredients
- 1 1/2 c. corn meal
- 1 tsp. salt
- 3 tsp. baking powder
- 2 eggs, slightly beaten
- 3/4 c. vegetable oil
- 1 c. sour cream
- 1 (16 oz.) can cream-style corn
- 3 jalapeno peppers, chopped
- 1 c. grated Cheddar cheese
Method
- Combine first 3 ingredients in mixing bowl.
- Add eggs, oil and sour cream and stir until blended.
- Stir in corn and peppers. Pour half the batter in a buttered 8 x 8 x 2-inch pan.
- Cover with Cheddar cheese.
- Add rest of batter and bake at 350° for 35 to 40 minutes.
