Ingredients

  • 2 (14 oz.) cans black-eyed peas, drained
  • 1 (15 1/2 oz.) can hominy (white or golden), drained
  • 2 medium firm tomatoes, chopped
  • 4 green onions, sliced or chopped finely
  • 1 medium size green pepper, chopped
  • 1 clove garlic, chopped very fine
  • 1/2 c. chopped onion
  • 1/2 c. chopped parsley
  • 1 (8 oz.) bottle Italian salad dressing (bought)
  • 1/2 or 1 jalapeno pepper, chopped fine (optional)

Method

  • Put all ingredients in bowl after chopping all veggies first. Pour dressing over all and toss.
  • Let marinate at least 2 hours. Drain and serve.
  • Serve with tortilla chips.
