- 1 1/2 lb. ground turkey or beef
- 1 c. chopped onion
- 1 garlic clove, crushed
- 1 (28 oz.) can whole tomatoes (undrained)
- 1 (4 oz.) can chopped mild green chillies (undrained)
- 2 c. water
- 2 envelopes chicken-flavored broth
- 1 (17 oz.) can whole kernel corn (undrained)
- 2 tsp. chili powder
- 1 bay leaf
- 3 small zucchini, sliced
Method
- In large saucepan, cook turkey or beef, onion and garlic until meat is browned; drain off fat.
- Add tomatoes, corn, chillies, water, broth, chili powder and bay leaf.
- Cover; simmer 20 minutes. Add zucchini; simmer 5 to 10 minutes more or until zucchini are tender-crisp.
- Makes 6 (1 3/4 cup) main-dish servings.
