Ingredients
- 1 (15 ounce) can chickpeas, rinsed and drained
- 14 lb cauliflower, chopped into small pieces

- 12 cup shallot, finely minced

Method
- In a large bowl, mash chickpeas until mostly broken up.
- Add in remaining ingredients and mix until combined.
