- 1/4 cup oil
- 1 1/2 pounds Ground meat
- 1 cup onions, chopped
- 1/2 cup green pepper, chopped
- 1 clove garlic, minced
- 1 1/4 lb can tomatoes, canned
- 1 lb 12 0z. can corn, canned
- 1 teaspoon salt
- 1 1/2 tablespoons Chili powder
- 1/4 teaspoon pepper
- 1 cup cornmeal
- 1 cup water
- 1 can olives, pitted
- 1 1/2 cups milk
- 2 tablespoons butter
- 1/4 pound cheddar cheese, grated
- 2 eggs, beaten
Method
- Brown meat in hot oil, add onions, garlic, green peppers, stirring until onions are golden
- stir in tomatoes, corn, salt, chili powder, pepper and simmer 5 minutes.
- stir in 1/2 cup of cornmeal, mixed with water. Simmer, covered for 10 minutes. Add Olives and turn into large baking dish.
- heat milk with1 teas. salt and butter. Slowly stir in 1/2 cup corn meal. Cook stirring until thickened. (I do this in the Microwave).Remove from heat and stir in cheese and eggs .
- Pour corn mixture over the meat mixture.
