Ingredients

  • 1/4 cup oil
  • 1 1/2 pounds Ground meat
  • 1 cup onions, chopped
  • 1/2 cup green pepper, chopped
  • 1 clove garlic, minced
  • 1 1/4 lb can tomatoes, canned
  • 1 lb 12 0z. can corn, canned
  • 1 teaspoon salt
  • 1 1/2 tablespoons Chili powder
  • 1/4 teaspoon pepper
  • 1 cup cornmeal
  • 1 cup water
  • 1 can olives, pitted
  • 1 1/2 cups milk
  • 2 tablespoons butter
  • 1/4 pound cheddar cheese, grated
  • 2 eggs, beaten

Method

  • Brown meat in hot oil, add onions, garlic, green peppers, stirring until onions are golden
  • stir in tomatoes, corn, salt, chili powder, pepper and simmer 5 minutes.
  • stir in 1/2 cup of cornmeal, mixed with water. Simmer, covered for 10 minutes. Add Olives and turn into large baking dish.
  • heat milk with1 teas. salt and butter. Slowly stir in 1/2 cup corn meal. Cook stirring until thickened. (I do this in the Microwave).Remove from heat and stir in cheese and eggs .
  • Pour corn mixture over the meat mixture.
