Ingredients

  • 1 onion
  • 1 c. cornmeal
  • 2 c. tomatoes
  • 1 tsp. salt
  • 1/4 tsp. garlic powder
  • 1 c. milk
  • 1 green pepper
  • 1 c. whole corn
  • 1/4 tsp. cumin
  • 1 c. whole pitted olives

Method

  • Chop and saute onion and pepper in a little water.
  • Add next 4 ingredients and cook until thick, stirring constantly.
  • Add other ingredients.
  • Olives are nice if left whole.
  • Pour into casserole and bake for 1 hour at 350°.
  • Will be firmer if made a day ahead and refrigerated.
  • Freezes well.
  • Just heat through to serve.
