Ingredients
- 1 onion
- 1 c. cornmeal
- 2 c. tomatoes
- 1 tsp. salt
- 1/4 tsp. garlic powder
- 1 c. milk
- 1 green pepper
- 1 c. whole corn
- 1/4 tsp. cumin
- 1 c. whole pitted olives
Method
- Chop and saute onion and pepper in a little water.
- Add next 4 ingredients and cook until thick, stirring constantly.
- Add other ingredients.
- Olives are nice if left whole.
- Pour into casserole and bake for 1 hour at 350°.
- Will be firmer if made a day ahead and refrigerated.
- Freezes well.
- Just heat through to serve.
