- 1/2 c. chopped onions
- 1 clove garlic, crushed
- 1 tsp. chili powder
- 2 tsp. corn oil margarine
- 1/2 c. catchup
- 1 Tbsp. light brown sugar
- 1/4 tsp. dry mustard
- 1/4 tsp. salt
- 1/4 c. water
- 2 Tbsp. white vinegar
- 4 large chicken breasts, split or cut into bite size pieces
Method
- Saute onions, garlic and chili powder in margarine over medium heat, stirring occasionally, until onion is tender.
- Stir in catchup, brown sugar, dry mustard, salt, water, and vinegar. Remove from heat; set aside.
- Remove any visible fat from chicken. Dip chicken into sauce mixture to coat both sides.
- Arrange in a single layer in a large roasting pan or baking dish.
- Spoon any remaining sauce over chicken.
- Bake at 375° for about 50 minutes or until done.
- Baste once or twice during the baking.
- Serves 8 people.
