Ingredients

  • 1/2 c. chopped onions
  • 1 clove garlic, crushed
  • 1 tsp. chili powder
  • 2 tsp. corn oil margarine
  • 1/2 c. catchup
  • 1 Tbsp. light brown sugar
  • 1/4 tsp. dry mustard
  • 1/4 tsp. salt
  • 1/4 c. water
  • 2 Tbsp. white vinegar
  • 4 large chicken breasts, split or cut into bite size pieces

Method

  • Saute onions, garlic and chili powder in margarine over medium heat, stirring occasionally, until onion is tender.
  • Stir in catchup, brown sugar, dry mustard, salt, water, and vinegar. Remove from heat; set aside.
  • Remove any visible fat from chicken. Dip chicken into sauce mixture to coat both sides.
  • Arrange in a single layer in a large roasting pan or baking dish.
  • Spoon any remaining sauce over chicken.
  • Bake at 375° for about 50 minutes or until done.
  • Baste once or twice during the baking.
  • Serves 8 people.
  • 250 calories each portion.
