Ingredients
- Some cooked noodles - I use thin buckwheat soba noodles, but any noodles will do
- 1/4 head red cabbage, grated
- 2 grated carrots
- A few chopped shallots
- 1 Lebanese cucumber - seeds removed and sliced diagonally
- Half a bunch of fresh mint, chopped.
- Fresh coriander/Vietnamese mint if you have it
- Some snow peas, lightly steamed.
- Crushed unsalted nuts - peanuts, walnuts or cashews

- 1/4 cup olive oil
- 1 tbls each fish sauce
- soy sauce
- fresh crushed garlic and ginger
- a little fresh chili
- 1 tspn sugar
- juice and grated zest of 2 limes
Method
Toss everything together, except the nuts, with a dressing.
Keep in the fridge for an hour or so before you eat it, and sprinkle with nuts before serving.
