Ingredients

  • 1 to 2 lb. turkey or beef, browned
  • 3/4 c. nonfat sour cream
  • 1 Tbsp. chili powder
  • 2 c. whole corn
  • 1 (16 oz.) jar salsa
  • corn tortilla chips (restaurant style)
  • 1 c. grated Monterey Jack or Cheddar cheese
  • 1 c. lettuce
  • 1 chopped tomato

Method

  • Brown meat and then add sour cream, chili powder, corn and salsa.
  • Mix well until blended with a fork or spoon.
  • Break up about 3 cups of chips and sprinkle over mixture (after it has been placed in a casserole dish).
  • Then sprinkle the cheese on top. Cover and bake at 350° for 25 to 30 minutes.
  • Pour remaining chips into bowl and serve to the side.
  • Cut up the lettuce and add tomato.
  • Serve as a side salad to be mixed with casserole.
