- 1 1/8 cups couscous
- 1 bunch herbs mixed, mint, lemon thyme, dill, basil, etc.
- 1 lemon zest and juice
- 1 handful raisins
- 1 tomato seeds removed, and cubed
- salt to taste
- extra-virgin olive oil to taste
- 1 leaf lettuce
Method
- Prepare the couscous according to the instructions.
- Add a handful of raisins.
- Sprinkle with lemon zest and juice, season with salt, and add the herbs, julienned.
- Season to taste and serve on top of a lettuce leaf.
