Ingredients

  • 1 1/8 cups couscous
  • 1 bunch herbs mixed, mint, lemon thyme, dill, basil, etc.
  • 1 lemon zest and juice
  • 1 handful raisins
  • 1 tomato seeds removed, and cubed
  • salt to taste
  • extra-virgin olive oil to taste
  • 1 leaf lettuce

Method

  • Prepare the couscous according to the instructions.
  • Add a handful of raisins.
  • Sprinkle with lemon zest and juice, season with salt, and add the herbs, julienned.
  • Season to taste and serve on top of a lettuce leaf.
