Ingredients

  • 1 tablespoon ghee
  • 1 onion, diced
  • 2 cups basmati rice
  • 3 12 cups chicken broth
  • 1 pinch saffron
  • 1 tomatoes
  • 12 cup frozen peas
  • 14 cup cilantro

Method

  • Heat ghee in pan.
  • (You can substitute clarified butter, olive, or canola oil for the ghee.
  • ).
  • Saute onion.
  • Add rice and saute until you release the rice aroma.
  • Add broth and saffron.
  • Bring to pressure in your pressure cooker for 10 minute if using white basmati, 20 min for brown.
  • Release pressure, add chopped tomato, peas, and cilantro.
  • Stir and let sit while you prepare the rest of the meal.
