Ingredients
- 1 tablespoon ghee
- 1 onion, diced
- 2 cups basmati rice
- 3 12 cups chicken broth
- 1 pinch saffron
- 1 tomatoes
- 12 cup frozen peas
- 14 cup cilantro
Method
- Heat ghee in pan.
- (You can substitute clarified butter, olive, or canola oil for the ghee.
- ).
- Saute onion.
- Add rice and saute until you release the rice aroma.
- Add broth and saffron.
- Bring to pressure in your pressure cooker for 10 minute if using white basmati, 20 min for brown.
- Release pressure, add chopped tomato, peas, and cilantro.
- Stir and let sit while you prepare the rest of the meal.
- Enjoy.
