Ingredients
- 3 eggs
- 1 tsp. salt
- 1 tsp. baking soda
- 3 tsp. vanilla
- 1 c. chopped pecans
- 1 c. oil (Crisco)
- 2 c. sugar
- 2 c. grated zucchini (wash and do not peel)
- 3 c. plain flour
- 1/2 tsp. baking powder
- 3 tsp. cinnamon
Method
- Beat eggs until light.
- Cream with sugar, oil and vanilla. Mix and sift all dry ingredients; add to sugar mixture.
- Beat. Add zucchini and nuts; mix.
- Pour into two loaf pans that have been greased and floured.
- Bake at 325° for 1 hour and 20 minutes. Let cool for 5 minutes on wire rack and dump from pans.
- Mmmm, good.
