Ingredients

  • 3 eggs
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 tsp. vanilla
  • 1 c. chopped pecans
  • 1 c. oil (Crisco)
  • 2 c. sugar
  • 2 c. grated zucchini (wash and do not peel)
  • 3 c. plain flour
  • 1/2 tsp. baking powder
  • 3 tsp. cinnamon

Method

  • Beat eggs until light.
  • Cream with sugar, oil and vanilla. Mix and sift all dry ingredients; add to sugar mixture.
  • Beat. Add zucchini and nuts; mix.
  • Pour into two loaf pans that have been greased and floured.
  • Bake at 325° for 1 hour and 20 minutes. Let cool for 5 minutes on wire rack and dump from pans.
  • Mmmm, good.
