Ingredients

  • 1 medium head (1/2 lb.) red cabbage
  • 4 slices bacon, diced
  • 1/4 c. packed brown sugar
  • 2 Tbsp. all-purpose flour
  • 1/2 c. water
  • 1/4 c. vinegar
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 small onion, sliced

Method

  • Prepare and cook 5 cups shredded cabbage.
  • Add 2 tablespoons vinegar or lemon juice to cooking salted water.
  • Cook bacon dices until crisp and drain.
  • Drain fat from skillet, reserving 1 tablespoon.
  • Stir sugar and flour into fat in skillet.
  • Stir in water, vinegar, salt, pepper and onion.
  • Stir until thickened (about 5 minutes).
  • Stir bacon and sauce mixture into hot cabbage in saucepan.
  • Heat thoroughly.
  • Garnish with additional diced bacon.
  • Yields 6 servings.
