Ingredients
- 1 medium head (1/2 lb.) red cabbage
- 4 slices bacon, diced
- 1/4 c. packed brown sugar
- 2 Tbsp. all-purpose flour
- 1/2 c. water
- 1/4 c. vinegar
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 small onion, sliced
Method
- Prepare and cook 5 cups shredded cabbage.
- Add 2 tablespoons vinegar or lemon juice to cooking salted water.
- Cook bacon dices until crisp and drain.
- Drain fat from skillet, reserving 1 tablespoon.
- Stir sugar and flour into fat in skillet.
- Stir in water, vinegar, salt, pepper and onion.
- Stir until thickened (about 5 minutes).
- Stir bacon and sauce mixture into hot cabbage in saucepan.
- Heat thoroughly.
- Garnish with additional diced bacon.
- Yields 6 servings.
