Ingredients

  • 1 (16 oz.) can salmon
  • 1 can cream of chicken soup
  • 1/4 c. fine chopped onion
  • 1 Tbsp. parsley
  • 3 eggs
  • 1/8 tsp. pepper
  • 1 1/2 c. fine bread crumbs
  • flour

Method

  • Combine drained salmon, chicken soup, onion, parsley, 1 egg and 1/2 cup bread crumbs.
  • Mix well and chill for one hour.
  • Shape into 3 inch patties.
  • Slightly beat the 2 remaining eggs.
  • Roll patties in flour, dip into egg, then coat with remaining bread crumbs. Chill an additional 2 hours.
  • Heat deep frying oil to 365°.
  • Add 4 croquettes at a time and fry about 3 minutes or until golden. Drain on paper towels.
  • Serve with cocktail or tartar sauce.
