Ingredients
- 1 (16 oz.) can salmon
- 1 can cream of chicken soup
- 1/4 c. fine chopped onion
- 1 Tbsp. parsley
- 3 eggs
- 1/8 tsp. pepper
- 1 1/2 c. fine bread crumbs
- flour
Method
- Combine drained salmon, chicken soup, onion, parsley, 1 egg and 1/2 cup bread crumbs.
- Mix well and chill for one hour.
- Shape into 3 inch patties.
- Slightly beat the 2 remaining eggs.
- Roll patties in flour, dip into egg, then coat with remaining bread crumbs. Chill an additional 2 hours.
- Heat deep frying oil to 365°.
- Add 4 croquettes at a time and fry about 3 minutes or until golden. Drain on paper towels.
- Serve with cocktail or tartar sauce.
