- 4 c. onions, chopped
- 4 c. green peppers, chopped
- 4 c. green tomatoes, chopped
- 2 red peppers, chopped
- 1/2 c. kosher salt
- 6 c. sugar
- 2 Tbsp. mustard seed
- 1 Tbsp. celery seeds
- 1 1/2 tsp. turmeric
- 4 c. cider vinegar or white vinegar
Method
- Place all vegetables in large pot.
- Sprinkle top with salt. Cover and let stay overnight.
- Place in colander to drain; pressing to remove all liquid.
- Place back in kettle.
- Add sugar, seasonings and vinegar.
- Mix and bring to boil.
- Lower heat and simmer 15 minutes.
- Pack into hot sterile jars.
- Do not use too much juice when packing.
- Vegetables can be chopped in food processor.
