Ingredients

  • 4 c. onions, chopped
  • 4 c. green peppers, chopped
  • 4 c. green tomatoes, chopped
  • 2 red peppers, chopped
  • 1/2 c. kosher salt
  • 6 c. sugar
  • 2 Tbsp. mustard seed
  • 1 Tbsp. celery seeds
  • 1 1/2 tsp. turmeric
  • 4 c. cider vinegar or white vinegar

Method

  • Place all vegetables in large pot.
  • Sprinkle top with salt. Cover and let stay overnight.
  • Place in colander to drain; pressing to remove all liquid.
  • Place back in kettle.
  • Add sugar, seasonings and vinegar.
  • Mix and bring to boil.
  • Lower heat and simmer 15 minutes.
  • Pack into hot sterile jars.
  • Do not use too much juice when packing.
  • Vegetables can be chopped in food processor.
