Ingredients

  • 1/2 cups Milk, Or Half And Half, Or Heavy Cream
  • 3 Tablespoons Butter Or Margarine
  • 2 Tablespoons Brown Sugar
  • 6 whole Sweet Potatoes, Baked, And Peeled
  • 2 whole Chipotle Peppers, Very Small Dice
  • 1 teaspoon Salt
  • 1/2 teaspoons Pepper

Method

  • Place milk, butter and brown sugar in sauce pan and heat over medium low until just warmed through.
  • In a large, heavy sauce pan, mash the baked sweet potatoes (*) until completely broken up. Add the chipotle peppers and stir well. If two chipotle peppers seem like too much for you, use only one, but we like the heat, so...we use three! (Remember to wash your hands after handling the chipotle!)
  • Add the heated milk/butter mixture a little at a time to the potato mixture, and stir together until it reaches the consistency of mashed potatoes. Salt and pepper to taste.
  • Eat and enjoy!
  • * Note: I bake the sweet potatoes with a little canola oil rubbed on the skin, at 350 degrees F, for about 40 minutes until a knife can be inserted very easily! Once they are cool enough to handle, peel them.
