Ingredients
- 2 or 3 cooked sweet potatoes or 1 can sweet potatoes (1 lb. 2 oz.)
- 1 egg
- 2 Tbsp. margarine
- 1/2 tsp. salt
- 1/4 to 1/2 c. brown sugar
- 10 slices canned pineapple (rings)
- dash of nutmeg
Method
- Mash drained sweet potatoes.
- Mix with beaten egg, margarine, salt, brown sugar and nutmeg.
- Arrange slices of pineapple in a lightly greased shallow baking pan.
- Mound the sweet potato mixture on each slice.
- Brush with additional margarine, if desired.
- Bake at 425° for about 15 minutes.
