Ingredients
- 3 c. grated raw sweet potatoes
- 4 eggs
- 1 1/2 c. oil
- 2 c. sugar
- 1 tsp. cinnamon
- 2 c. self-rising flour
- 1 c. chopped pecans or walnuts
Method
- Mix potatoes, oil and sugar in a bowl.
- Add 1 egg at a time to mixture.
- Mix well after each egg.
- Sift cinnamon with flour and add slowly to egg mixture.
- Stir in nuts.
- Pour mixture into greased and floured 9-inch cake pans.
- Bake at 350° for 1 hour. Cool completely before frosting.
