Ingredients
- 3 c. cooked yams or sweet potatoes (can or fresh yams)
- 1/4 c. butter
- 3/4 c. brown sugar
- 2 Tbsp. milk
- 1/2 tsp. lemon juice
- 8 marshmallows (large)
- 1 c. crushed corn flakes
Method
- Mash sweet potatoes. Add butter, sugar, milk and juice.
- Spoon up mixture.
- Shape around marshmallows.
- Roll ball in crushed cornflakes.
- Place in buttered baking dish.
- Bake at 350° for about 20 minutes or until marshmallows begin to ooze. Makes 8 balls.
