Ingredients
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 c. milk
- 4 egg yolks
- 1 tsp. lemon rind, grated
- 1 c. lemon juice
- 3 Tbsp. butter
Method
- Combine sugar, cornstarch and salt.
- Add milk and cook, stirring constantly until thick.
- Boil 1 minute.
- Remove from heat.
- Beat egg yolks until creamy and add to hot mixture.
- Cook 2 to 3 more minutes.
- Remove from heat and stir in rind, juice and butter.
