- 1 c. flour
- 1/2 tsp. salt
- 1/3 c. shortening
- 3 to 4 Tbsp. cold water
- 2 medium apples, cored and thinly sliced (2 c.)
- 2 slightly beaten eggs
- 1 1/2 c. light cream
- 2/3 c. brown sugar
- 3 medium sweet potatoes, cooked, peeled and mashed (2 c.)
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/4 tsp. nutmeg
Method
- In bowl, stir together flour and the first 1/2 teaspoon salt. Cut in shortening until piece are the size of small peas.
- Sprinkle 1 tablespoon of the water over part of the mixture; toss with a fork to moisten.
- Add remaining water, a tablespoon at a time, tossing until all of the mixture is moistened.
- Form into a ball, flatten on lightly floured surface.
- Place pastry in a 9-inch pie plate; crimp edges high.
- Place apples in bottom of pastry.
- In bowl, combine potatoes, eggs, cream, brown sugar, cinnamon, salt and nutmeg; beat until smooth.
- Pour over apples.
- Cover edges of crust with foil.
- Bake at 375° for 25 minutes.
