Ingredients

  • 1 c. flour
  • 1/2 tsp. salt
  • 1/3 c. shortening
  • 3 to 4 Tbsp. cold water
  • 2 medium apples, cored and thinly sliced (2 c.)
  • 2 slightly beaten eggs
  • 1 1/2 c. light cream
  • 2/3 c. brown sugar
  • 3 medium sweet potatoes, cooked, peeled and mashed (2 c.)
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg

Method

  • In bowl, stir together flour and the first 1/2 teaspoon salt. Cut in shortening until piece are the size of small peas.
  • Sprinkle 1 tablespoon of the water over part of the mixture; toss with a fork to moisten.
  • Add remaining water, a tablespoon at a time, tossing until all of the mixture is moistened.
  • Form into a ball, flatten on lightly floured surface.
  • Place pastry in a 9-inch pie plate; crimp edges high.
  • Place apples in bottom of pastry.
  • In bowl, combine potatoes, eggs, cream, brown sugar, cinnamon, salt and nutmeg; beat until smooth.
  • Pour over apples.
  • Cover edges of crust with foil.
  • Bake at 375° for 25 minutes.
