Ingredients

  • 1 1/2 lb. peeled tomatoes
  • 1/2 cucumber
  • 2 large cloves garlic
  • 12 black olives, diced
  • 1 small onion, finely chopped
  • 1 small green pepper, cut into strips
  • 3 or 4 Tbsp. olive oil
  • 1 Tbsp. wine vinegar
  • salt and pepper to taste
  • chopped fresh parsley (handful)

Method

  • Chop the tomatoes finely until almost pulp-like.
  • Add the diced, unpeeled cucumber, the chopped garlic, olives, onion, green pepper, oil, vinegar, seasoning and herbs.
  • Chill the mixture before serving.
  • Sprinkle with hard-boiled eggs.
