Ingredients
- 1 1/2 lb. peeled tomatoes
- 1/2 cucumber
- 2 large cloves garlic
- 12 black olives, diced
- 1 small onion, finely chopped
- 1 small green pepper, cut into strips
- 3 or 4 Tbsp. olive oil
- 1 Tbsp. wine vinegar
- salt and pepper to taste
- chopped fresh parsley (handful)
Method
- Chop the tomatoes finely until almost pulp-like.
- Add the diced, unpeeled cucumber, the chopped garlic, olives, onion, green pepper, oil, vinegar, seasoning and herbs.
- Chill the mixture before serving.
- Sprinkle with hard-boiled eggs.
