- 1 lb. pork shoulder, cubed
- 1 beaten egg
- 1/2 c. flour
- 1/2 tsp. salt
- 4 Tbsp. water
- 1 c. pineapple chunks
- 3/4 c. pineapple juice
- 1 green pepper, cut in 1-inch strips diagonally
- 1/2 c. carrot, raw, thinly sliced
- 1/4 c. brown sugar
- 1 Tbsp. soy sauce
- 1/4 c. vinegar
- 2 Tbsp. cornstarch
- 1/4 c. water
Method
- Make batter with egg, flour, salt and water.
- Salt and pepper the pork and coat with the batter.
- Fry until brown.
- Simmer with little water, covered, about 1 hour while making sauce.
