Ingredients

  • 2 c. milk
  • 1 cake yeast
  • 2 1/4 c. lukewarm water
  • 1 Tbsp. sugar
  • 6 c. white flour
  • 1 c. dark syrup
  • 1 1/2 tsp. fennel seed
  • 1 1/2 tsp. anise seed
  • 1/2 c. molasses
  • 8 c. rye flour
  • 1 Tbsp. salt
  • grated orange rind (2 oranges)
  • 1/4 c. chopped candied fruit
  • 1 c. brown sugar (loose pack)
  • 4 Tbsp. shortening

Method

  • Scald milk and cool to lukewarm.
  • Soften yeast in 1/4 cup lukewarm water.
  • Add sugar 1 1/2 cup lukewarm water and milk.
  • Add white flour and beat well.
  • Let rise until double in bulk.
