Ingredients

  • 2 9/16 cups bread flour
  • 3/4 tablespoon sugar
  • 1 1/16 cups whole milk
  • 1 1/4 tablespoons fresh yeast
  • 1 2/3 cups bread flour
  • 1 egg
  • 9/16 tablespoon salt
  • 9/16 teaspoon ground cardamom
  • 5 5/8 tablespoons sugar
  • 1/2 cup butter softened

Method

  • In a bowl, mix the flour, sugar, milk, and yeast. Stir well.
  • Cover and let it rest to double its size.
  • Mix the pre-ferment, flour, egg, salt, cardamom, and sugar.
  • Knead by hand, the dough may be difficult to knead at first.
  • Let it rest for 10 minutes and add the butter in parts to thoroughly mix in.
  • Continue to knead until the dough is soft and elastic. Shape into a ball.
  • Place in a greased bowl and let it rest.
  • Divide into 40 to 50 gram pieces and shape into rolls.
  • Place on a baking sheet leaving sufficient space between them.
  • Preheat the oven to 230 degrees Celsius.
  • Cover the rolls with a wet rag or plastic and let them rise.
  • Once they have risen somewhat, place in the oven. Spray the inside of the oven with water.
  • Bake for 9 to 10 minutes.
  • Place on a cooling rack to cool completely.
  • To toast, open with a fork (to achieve an uneven surface) and place in the oven at 130 to 140 C.
