Ingredients
- 2 9/16 cups bread flour
- 3/4 tablespoon sugar
- 1 1/16 cups whole milk
- 1 1/4 tablespoons fresh yeast
- 1 2/3 cups bread flour
- 1 egg
- 9/16 tablespoon salt
- 9/16 teaspoon ground cardamom
- 5 5/8 tablespoons sugar
- 1/2 cup butter softened
Method
- In a bowl, mix the flour, sugar, milk, and yeast. Stir well.
- Cover and let it rest to double its size.
- Mix the pre-ferment, flour, egg, salt, cardamom, and sugar.
- Knead by hand, the dough may be difficult to knead at first.
- Let it rest for 10 minutes and add the butter in parts to thoroughly mix in.
- Continue to knead until the dough is soft and elastic. Shape into a ball.
- Place in a greased bowl and let it rest.
- Divide into 40 to 50 gram pieces and shape into rolls.
- Place on a baking sheet leaving sufficient space between them.
- Preheat the oven to 230 degrees Celsius.
- Cover the rolls with a wet rag or plastic and let them rise.
- Once they have risen somewhat, place in the oven. Spray the inside of the oven with water.
- Bake for 9 to 10 minutes.
- Place on a cooling rack to cool completely.
- To toast, open with a fork (to achieve an uneven surface) and place in the oven at 130 to 140 C.
