Ingredients

  • 2 medium oranges
  • 1 pkg. lemon cake mix
  • 1/3 c. vegetable oil
  • 3 eggs
  • whipped topping

Method

  • Grate orange peel and squeeze juice from oranges.
  • Add enough water to orange juice to make 1 cup.
  • Beat cake mix (dry), 1 tablespoon orange peel, juice, oil and eggs in a large bowl on low speed (30 seconds).
  • Beat on medium speed for 2 minutes.
  • Pour into greased and floured 13 x 9-inch cake pan.
  • Bake 30 to 35 minutes or until cake springs back when touched in center.
  • Cool. Serve with whipped topping.
