Ingredients
- 2 medium oranges
- 1 pkg. lemon cake mix
- 1/3 c. vegetable oil
- 3 eggs
- whipped topping
Method
- Grate orange peel and squeeze juice from oranges.
- Add enough water to orange juice to make 1 cup.
- Beat cake mix (dry), 1 tablespoon orange peel, juice, oil and eggs in a large bowl on low speed (30 seconds).
- Beat on medium speed for 2 minutes.
- Pour into greased and floured 13 x 9-inch cake pan.
- Bake 30 to 35 minutes or until cake springs back when touched in center.
- Cool. Serve with whipped topping.
