Ingredients

  • 2-4 Chicken Breasts (defrosted and cut into Cubes)
  • Olive Oil
  • 1 Jar Salsa (usually get chunky)
  • Broccoli (I prefer fresh, but doesn't really matter)
  • Flour

Method

  • In bowl, take cubed chicken and roll into flour.
  • In small bowl, heat up couple tbsp of olive oil, garlic and broccoli (or vegetable of choice). Cook to your liking.
  • In large skillet, heat up a couple of tbsp of olive oil and couple of cloves of garlic. Gradually add cubes of flour-ed chicken. Flip chicken, cook through. Once chicken is fully cooked, add jar of salsa and vegetable. Mix together, heat for additional 3 minutes or so on medium heat. Salsa will thicken once it hits flour on chicken, etc.
  • To serve:
  • I usually serve over brown rice and sprinkle shredded mexican cheese on top.
