Ingredients
- 6 c. squash, cut in 1-inch cubes
- 1 c. chopped onion
- 1 c. grated carrots
- 1 c. sour cream
- 1 c. mushrooms
- 1 c. stuffing mix
- 1 can cream of mushroom soup
- 1 Tbsp. melted butter
Method
- Cook squash and onion in 1/2 cup of water for 5 minutes.
- Mix with carrots, sour cream, soup, mushrooms and 1/2 cup stuffing mix.
- Put in a greased 2-quart baking dish.
- Mix remaining 1/2 cup stuffing with the melted butter.
- Place on top of squash mixture. Cover and bake in a 350° oven for 30 minutes.
