Ingredients

  • 6 c. squash, cut in 1-inch cubes
  • 1 c. chopped onion
  • 1 c. grated carrots
  • 1 c. sour cream
  • 1 c. mushrooms
  • 1 c. stuffing mix
  • 1 can cream of mushroom soup
  • 1 Tbsp. melted butter

Method

  • Cook squash and onion in 1/2 cup of water for 5 minutes.
  • Mix with carrots, sour cream, soup, mushrooms and 1/2 cup stuffing mix.
  • Put in a greased 2-quart baking dish.
  • Mix remaining 1/2 cup stuffing with the melted butter.
  • Place on top of squash mixture. Cover and bake in a 350° oven for 30 minutes.
