Ingredients
- 1/4 c. chopped onion
- 2 Tbsp. butter
- 2 c. fresh corn, cut from the cob
- 3 medium tomatoes, peeled and cubed
- 4 small yellow squash, sliced
- 1 tsp. salt
- 3/4 tsp. dried whole oregano
- 1/2 tsp. sugar
- 1/4 tsp. pepper
Method
- Saute onion in butter in a Dutch oven.
- Add remaining ingredients.
- Cover and cook over medium heat for 15 minutes, or until vegetables are tender.
- Serves 8.
