Ingredients
- 2 1/2 c. sifted flour
- 1/2 tsp. salt
- 5 tsp. baking powder
- 1 well beaten egg
- 1 c. sugar
- 3 Tbsp. melted shortening
- 1 c. nuts
- 1 c. raisins
- 1 Tbsp. flour
- 1 c. milk
Method
- Heat skillet until almost smoking.
- Turn burner down to low. Mix 1 to 1 1/2 cups corn meal mix, milk and egg.
- May also add chopped onion and/or sour cream.
- Add water if needed to make batter thin like cake batter.
- Pour into hot skillet and place lid on.
- Then turn batter and let cook.
- Crack lid to let the steam out so cornbread will not be soggy.
- One bag of self-rising corn meal is used.
