Ingredients

  • 2 1/2 c. sifted flour
  • 1/2 tsp. salt
  • 5 tsp. baking powder
  • 1 well beaten egg
  • 1 c. sugar
  • 3 Tbsp. melted shortening
  • 1 c. nuts
  • 1 c. raisins
  • 1 Tbsp. flour
  • 1 c. milk

Method

  • Heat skillet until almost smoking.
  • Turn burner down to low. Mix 1 to 1 1/2 cups corn meal mix, milk and egg.
  • May also add chopped onion and/or sour cream.
  • Add water if needed to make batter thin like cake batter.
  • Pour into hot skillet and place lid on.
  • Then turn batter and let cook.
  • Crack lid to let the steam out so cornbread will not be soggy.
  • One bag of self-rising corn meal is used.
