Ingredients
- 1 (12 to 14 lb.) turkey
- 1 tsp. salt
- 1 Tbsp. black pepper
- 1 tsp. sage
- 1/2 c. melted butter
- 2 cloves garlic
- 1 large onion, chopped
- 1/2 c. Sauterne
Method
- Soak turkey in cold water for 3 hours to remove excess blood. Rub turkey with salt, pepper, sage and butter or margarine.
- Place garlic and onions inside breast and splash cavity with Sauterne. Place on water smoker rack.
- Add pecan or hickory chips to coals. Cook, covered, until coals die, usually 10 to 12 hours.
