Ingredients

  • 1 (12 to 14 lb.) turkey
  • 1 tsp. salt
  • 1 Tbsp. black pepper
  • 1 tsp. sage
  • 1/2 c. melted butter
  • 2 cloves garlic
  • 1 large onion, chopped
  • 1/2 c. Sauterne

Method

  • Soak turkey in cold water for 3 hours to remove excess blood. Rub turkey with salt, pepper, sage and butter or margarine.
  • Place garlic and onions inside breast and splash cavity with Sauterne. Place on water smoker rack.
  • Add pecan or hickory chips to coals. Cook, covered, until coals die, usually 10 to 12 hours.
