Ingredients

  • 1 easy pastry dough disc
  • 1 cup of sugar
  • 1/4 cup corn starch
  • 1 1/4 cups of evaporated milk
  • 1 cup of whole milk
  • 1 stick of butter
  • cinnamon (optional)

Method

  • Preheat oven to 375°F. Roll out dough on floured surface to 12-inch round. Transfer to 9-inch pie dish. Fold under edge then crimp. Pierce crust all over with fork.
  • Bake crust until it's golden brown, about 10 to 15 minutes. Cool on rack about 10 minutes.
  • Combine remaining ingredients in a sauce pan and cook over medium heat, stirring constantly, until the mixture thickens. Pour into baked pastry, sprinkle with cinnamon, cool and serve.
