Ingredients
- 2 to 3 medium potatoes, diced
- 2 carrots, sliced thin
- 1 to 2 stalks celery, chopped
- 1 qt. half and half
- small to medium onion, chopped
- 4 Tbsp. butter
- 1 pt. shucked oysters and their liquid
- parsley (optional)
- ground pepper
Method
- Cook potatoes and carrots (steaming them is best, using a microwave to do this is the fastest way).
- Saute onions and celery in butter in pan.
- Strain potatoes and carrots and add to pan. Add milk and ground pepper.
- Heat to boiling point.
- Add oysters. (Note:
- Oysters cook very quickly, so do not add them until you are ready to serve or turn the burner off after you add them.)
