Ingredients

  • 2 to 3 medium potatoes, diced
  • 2 carrots, sliced thin
  • 1 to 2 stalks celery, chopped
  • 1 qt. half and half
  • small to medium onion, chopped
  • 4 Tbsp. butter
  • 1 pt. shucked oysters and their liquid
  • parsley (optional)
  • ground pepper

Method

  • Cook potatoes and carrots (steaming them is best, using a microwave to do this is the fastest way).
  • Saute onions and celery in butter in pan.
  • Strain potatoes and carrots and add to pan. Add milk and ground pepper.
  • Heat to boiling point.
  • Add oysters. (Note:
  • Oysters cook very quickly, so do not add them until you are ready to serve or turn the burner off after you add them.)
