Ingredients

  • 2 pkgs frozen spinach, cooked, well-drained, and chopped
  • 1 med. onion, chopped fine
  • 2 c. seasoned stuffing
  • 3/4 c. margarine, softened
  • 1/2 c. grated sharp cheddar cheese
  • 4 eggs, beaten
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. thyme

Method

  • Cook onion with spinach.
  • Drain well.
  • Chop spinach.
  • Combine all ingredients.
  • Chill several hours.
  • Roll into balls.
  • Place on cookie sheet.
  • Bake 10 -15 minutes at 350° or until golden brown. Or roll into ball and freeze, or bake balls and freeze.
  • Makes 50 balls.
  • Do not thaw to bake or heat.
