Ingredients
- 2 pkgs frozen spinach, cooked, well-drained, and chopped
- 1 med. onion, chopped fine
- 2 c. seasoned stuffing
- 3/4 c. margarine, softened
- 1/2 c. grated sharp cheddar cheese
- 4 eggs, beaten
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. thyme
Method
- Cook onion with spinach.
- Drain well.
- Chop spinach.
- Combine all ingredients.
- Chill several hours.
- Roll into balls.
- Place on cookie sheet.
- Bake 10 -15 minutes at 350° or until golden brown. Or roll into ball and freeze, or bake balls and freeze.
- Makes 50 balls.
- Do not thaw to bake or heat.
