- 1 lb. browned ground beef
- salt and pepper to taste
- 1 (12-inch) zucchini, hollowed out and cut lengthwise
- 1 beaten egg
- 1/2 c. bread crumbs
- grated Parmesan cheese
- 1 medium chopped onion
- 1 medium green pepper, chopped
- 32 oz. jar spaghetti sauce
- 3/4 c. Mozzarella cheese, shredded
Method
- Cut zucchini in half lengthwise, dig out pulp and saute it with ground beef, onion and green pepper.
- Put mixture into bowl with
- egg, bread
- crumbs
- and
- Parmesan
- cheese.
- Blend together. Put into
- zucchini
- shells.
- Put spaghetti sauce in bottom of 9 x 13-inch
- pan,
- lay
- zucchini
- on
- top.
- Bake 30 minutes at 350°. Put Mozzarella cheese on top of squash a few minutes before finished baking.
- Serve with spaghetti noodles or rice.
