Ingredients

  • 1 lb. browned ground beef
  • salt and pepper to taste
  • 1 (12-inch) zucchini, hollowed out and cut lengthwise
  • 1 beaten egg
  • 1/2 c. bread crumbs
  • grated Parmesan cheese
  • 1 medium chopped onion
  • 1 medium green pepper, chopped
  • 32 oz. jar spaghetti sauce
  • 3/4 c. Mozzarella cheese, shredded

Method

  • Cut zucchini in half lengthwise, dig out pulp and saute it with ground beef, onion and green pepper.
  • Put mixture into bowl with
  • egg, bread
  • crumbs
  • and
  • Parmesan
  • cheese.
  • Blend together. Put into
  • zucchini
  • shells.
  • Put spaghetti sauce in bottom of 9 x 13-inch
  • pan,
  • lay
  • zucchini
  • on
  • top.
  • Bake 30 minutes at 350°. Put Mozzarella cheese on top of squash a few minutes before finished baking.
  • Serve with spaghetti noodles or rice.
