Ingredients
- 6 medium sliced zucchini
- 3 c. soft bread crumbs
- 1/2 c. Parmesan cheese
- 1 small onion, minced
- 3 Tbsp. minced parsley
- 1 Tbsp. salt
- 1/8 Tbsp. pepper
- 2 eggs, beaten
- 2 Tbsp. butter
Method
- Wash zucchini, cut off ends, do not pare.
- Cook zucchini in boiling salted water 5 minutes.
- Halve zucchini lengthwise, remove pulp with spoon.
- Save shells.
- Combine pulp with bread crumbs, Parmesan cheese, onion, parsley, salt, pepper and eggs.
- Mix well. Fill zucchini shells with this mixture. Dot with butter and sprinkle with additional Parmesan.
- Bake in a 350° oven for 30 minutes.
- Yields 6 servings.
