Ingredients

  • 6 medium sliced zucchini
  • 3 c. soft bread crumbs
  • 1/2 c. Parmesan cheese
  • 1 small onion, minced
  • 3 Tbsp. minced parsley
  • 1 Tbsp. salt
  • 1/8 Tbsp. pepper
  • 2 eggs, beaten
  • 2 Tbsp. butter

Method

  • Wash zucchini, cut off ends, do not pare.
  • Cook zucchini in boiling salted water 5 minutes.
  • Halve zucchini lengthwise, remove pulp with spoon.
  • Save shells.
  • Combine pulp with bread crumbs, Parmesan cheese, onion, parsley, salt, pepper and eggs.
  • Mix well. Fill zucchini shells with this mixture. Dot with butter and sprinkle with additional Parmesan.
  • Bake in a 350° oven for 30 minutes.
  • Yields 6 servings.
